I havent tried this activity myself – and have learned over the years to NEVER EVER climb into a canoe with my husband. …… but this is fairly close to Daytona and would be a easy location to visit for someone learning to kayak or canoe. Looks like they rent Kayaks, canoes and hydrobikes with sunset boat tours and eco boat trips too.

Cracker Creek is an environmental and historical treasure of Port Orange. Located on the western side of scenic Spruce Creek, this 20 acre sanctuary is a natural home for a variety of endangered plants and animals that can be seen by boat or on foot. Cracker Creek is a pure nature preserve and is perfect for many recreational activities such as boating, bird watching, canoeing, kayaking, group camping, and hiking.
The lifeline of Cracker Creek preserve is a unique natural black water system known as Spruce Creek. It is a rare waterway because it remains one of a few unspoiled streams in Florida, and it is very much like other tributaries such as the Amazon river. Touring the channels of Cracker Creek by boat is an enriching and relaxing experience for everyone. While slowly drifting down these streams, many different habitats can be seen including dense forests, saltwater swamps, freshwater bogs, and cypress marshes. Adventuring into the wetlands and winding cypress trees, visitors will find alligators, raccoons, various types of lizards, turtles, Sandhill Cranes, Yellow-Crowned Night Herons, and Red-Cockaded Woodpeckers.
Like pioneer explorers, guests will experience this tranquil pristine land and river stories on their own or as a group. Cracker Creek’s launch site is the only public access to Spruce Creek west of Highway US1. Watercraft rentals include life vests, safety gear, and paddles. Private pontoon guided tours can be arranged for small groups as well as pirate-themed or sunset boat rides. Visitors can also choose to enjoy and explore nature on our regularly scheduled pontoon boat eco-tours. Picnic areas, restroom facilities, and other amenities are convenient to the handicap-accessible boat launch with transportation provided for those in need.
